Bella Sweets Vanilla Cupcake Recipe

Bella Sweets is a Brisbane-based business specialising in sweet treats and dessert tables and was launched in 2012 by a super talented (and self-taught) baker, Monaliz.

I have long admired Monaliz’s delectable macarons and cupcakes, so you can imagine how excited I was when she offered to share her vanilla cupcake recipe on the blog!

I also asked Monaliz to share her top tips for putting together a dessert table for a kids party. She recommends that you 'keep in mind the ages of the children attending the party, younger kids may not like certain sweets such as macarons and tarts so keep it simple by serving cupcakes and decorated cookies."

Monaliz recommends serving two or three pieces of sweet food per child. And for those wanting to minimise the sugar on the dessert table, Monaliz says "you can always incorporate fruits and vegetable crudités placed in fun cups or threaded on skewers and some savoury tarts or sandwiches that are shaped to your theme. Kids like colours so if you can make the savoury food look 'fun' they will eat that too!"

Bella Sweets Vanilla Cupcake Recipe

Recipe by Monaliz Abella

(Makes at least 12-13 cupcakes)

1 ¼ cups plain flour

1 ¼ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

2 eggs

¾ cup caster sugar

1 ½ teaspoons pure vanilla extract

½ cup vegetable oil (you may use extra light olive oil as well)

½ cup buttermilk

  • Preheat oven to 170 deg Celsius

  • Line regular cupcake pans with cupcake liners

  • Sift all dry ingredients into a bowl and set aside

  • In the bowl of an electric mixer, add eggs and beat for 20 seconds on medium speed. Add the sugar and continue to beat on medium speed for about 30 seconds. Add the vanilla and oil and beat until fully incorporated.

  • Add the flour and milk in small additions and beat. Make sure to start and end with the flour and try not to overbeat but just make sure the mixture is fully combined. Scrape down the sides of the bowl.

  • This batter will be very thin so carefully pour batter into the prepared cupcake liners. Fill the cupcake liners about 2/3 full.

  • Bake the cupcakes in the pre-heated oven for about 12-14 minutes or until a skewer inserted comes out clean or with minimal crumbs.

  • Cool in the pan for 1 minute and then remove and place on a wire rack to cool completely.
